First of the New Season: Asparagus and Purple Sprouting

After a long hard winter what can be better and healthier than looking forward to the new season of fresh and juicy vegetables? Here are two to start the season with.

As the Purple Sprouting (or Broccoli) readies for picking you know that spring is just around the corner, and when the green and white Asparagus shoots start pushing up through the soil you are certain that spring has at last arrived.

Purple Sprouting tastes just great; it is also very good for you with high levels of vitamin C and multiple nutrients with potent anti-cancer properties. It will aid your immune response system and boosts DNA repair in cells.

Boiling Broccoli reduces the levels of suspected anti-carcinogenic compounds, however, this can be avoided through other methods of cooking such as steaming, microwaving, and stir frying where no significant losses occur.

Asparagus is another astonishingly healthy option. It is low in calories, very low in sodium and it is a good source of vitamin B6, calcium, magnesium and zinc (to mention just a few), and it is very good source of dietary fibre and protein, as well as chromium, a trace mineral that enhances the ability of insulin to transport glucose from the bloodstream into cells.

Asparagus is a wonderfully quick vegetable to prepare and cook; it takes less than 10 minutes. Lightly steaming or boiling are the usual favourites after which it can be enjoyed simply, on its own, covered in butter or dipped in Hollandaise sauce. As a vegetable accompaniment, it goes beautifully with virtually any dish or for a really quick snack with a piece of ham and a poached egg.

Quick and easy, the two openers for the new season, they taste wonderful and could not be better for you.
